Chickpea, sweet potatoes and spinach taco
I used 1/2 can of chickpeas, 2 medium sweet potatoes and 3 balls of frozen spinach.
Boil the sweet potatoes, simmer the spinach, drain the chickpeas (keep the water – aquafaba!) and mix.
Serve the chickpeas, sweet potatoes and spinach mix on a lettuce leaf. Eat as a taco!
